Beef Jerky

Last weekend Ernesto, his cousin Diego, and I went down to the Sales house to spend some time catching up.  When we arrived, we learned that Tim and the boys had bought a cow leg from Ulysis (the farmer who sold us our carcass).  The boys were looking to make some money and had decided to take a shot at selling beef jerky in local stores. Tim had a much more sanitary, systematic method for butchering his meat than was used on our carcass (see the post "Butchers Exist for a Reason" for a refresher on our own butchering experience).

This weekend I saw Walker (the older son) at the local grocery store, selling bags of their jerky, which they called "Jaguar Jerky".  Yesterday I saw Walker again at the store and he told me they needed a new name for their jerky.  Apparently, many customers were disconcerted, believing that the Sales were actually selling jerky from jaguars.  We were all a bit surprised that people would jump to this conclusion, given that the package says "from grass-fed beef" and that killing jaguars (which aren't easy to find here anyway) is super illegal.  Oh well.

Not sure what the new name will be, but the jerky is DELICIOUS!
